Ingredients

1 cup green lentil ( uncooked )
6 -7 cups water
1 tablespoon canola oil
1 small onion , finely chopped
2 spring onions , white and greens chopped
2 potatoes , cubed ( small )
2 carrots , diced ( again , only peel if desired )
2 stalks celery , chopped
2 -3 vegetable bouillon cubes
1 pinch nutmeg
1 tablespoon white vinegar
salt and pepper , to taste
4 -8 sausages , precooked ( wieners , knackwurst , bockwurst , etc . )

Instructions

1.Rinse the lentils and add them to a large pot with water to cook for 30 minutes on medium heat.
2.Heat up the canola oil in a skillet over medium heat. Add the onions and cook for 3 minutes. Add spring onions and cook for another 2 minutes. Add the potatoes, carrots, celery, vegetable bouillon cubes, nutmeg, vinegar, salt, and pepper. Sauté for around 5 minutes.
3.Once the lentils are cooked, drain any excess water and add them to the pot with the sautéed vegetables. Add more water until it covers the lentils and vegetables.
4.Cover the pot and cook until the vegetables are tender. This should take around 15-20 minutes.
5.Preheat oven to 400°F. Place sausages in a baking dish and bake for 10-15 minutes until fully cooked.
6.Serve the lentil stew hot with pre-cooked sausages on the side.
