Ingredients

20 g butter
1 leek , chopped ( white part only )
1 clove garlic
200 g ham , chopped
100 g mushrooms , chopped
1 red chile , finely chopped
1/2 cup milk
1 egg yolk
salt
pepper , to taste
parmesan cheese , to taste

Instructions

1.Cook the pasta according to the package directions and keep it warm.
2.In a skillet, melt the butter over medium heat. Add the leek and garlic and sauté for 2-3 minutes.
3.Add chopped ham and cook until browned, about 5 minutes.
4.Add the chopped mushrooms and chili pepper and cook for another 2-3 minutes.
5.In a small bowl, whisk together the egg yolk and milk.
6.Reduce heat to low and add the egg yolk mixture to the skillet, then toss it all together with the linguini. Cook over medium-low heat until the egg yolk mixture thickens to coat the pasta. Be careful not to heat too high or the egg yolk will curdle.
7.Season with salt and pepper and sprinkle parmesan cheese on top.
