Ingredients

1 1/2 lbs lean ground beef
1 package taco seasoning , divided
1/2 cup water
8 ounces Mexican blend cheese
8 ounces chunky salsa
1 bag Frito Scoops , bite-size
1 container sour cream

Instructions

1.Preheat the oven to 350 degrees F.
2.Brown the lean ground beef in a pan and drain any excess fat.
3.Add half of the taco seasoning to the beef and mix well.
4.Add water and cook until all the liquid has been absorbed by the beef, set aside.
5.Mix the salsa and remaining taco seasoning in a bowl, set aside.
6.Place the Frito Scoops on a baking sheet lined with parchment paper.
7.Add a spoonful of beef to each scoop.
8.Add a spoonful of the salsa and taco seasoning mix to each scoop.
9.Add shredded Mexican blend cheese to each scoop.
10.Bake for 10-12 minutes or until cheese is melted and bubbly.
11.Let it cool for 5 minutes before serving with a dollop of sour cream on top of each scoop.
