Ingredients

1 lb extra large shrimp
1/2 cup chopped parsley
4 cloves garlic
1/4 cup olive oil
1 lemon , juice of
1 bottle clam juice ( chicken broth can be substituted-10 ounces )
1 lb linguine
salt and pepper

Instructions

1.Begin by cleaning the shrimp, then put them aside.
2.Finely chop the garlic and parsley.
3.Heat up the olive oil in a skillet and add the garlic to cook till it becomes fragrant.
4.Add the shrimp and cook till it turns pink. This should take about 2-3 minutes.
5.Add the lemon juice and bottle of clam juice and continue to cook for another 2-3 minutes.
6.Add remaining parsley and season with salt and pepper. Remove from heat.
7.Cook the linguine according to packaging instructions and drain.
8.Serve the scampi over the hot, cooked linguine.
