Ingredients

6 medium white potatoes
1/2 cup mayonnaise ( Do NOT use fat free or low fat )
1/2 cup sour cream
1/2 cup salsa
1 package taco seasoning mix
1 can whole kernel corn , drained
2/3 cup sliced celery
2/3 cup shredded carrot
2/3 cup chopped green pepper
2 cans sliced ripe olives , drained
1/2 cup chopped red onion
2 tomatoes , cut into wedges
Potato salad is a staple at summer BBQs and picnics, but Linda's Santa Fe Potato Salad takes this classic dish to the next level. Instructions

1.Boil the potatoes in salted water until tender, about 20 minutes.
2.Drain the potatoes and let them cool.
3.In a large bowl, mix together the mayonnaise, sour cream, salsa, and taco seasoning mix.
4.Add in the corn, celery, carrot, green pepper, olives, and red onion, and stir until well combined.
5.Cut the cooled potatoes into large, bite-sized pieces, and fold them gently into the mixture.
6.Chill the salad for at least 1 hour, or overnight, to allow the flavors to meld together.
7.Just before serving, garnish with sliced tomatoes and enjoy!
