Ingredients

1/4 lb boneless pork loin

2 tablespoons cornstarch
2 tablespoons cold water
1/4 teaspoon white pepper
2 eggs , slightly beaten
2 tablespoons chopped green onions
2 teaspoons red pepper sauce
1/2 teaspoon sesame oil
Hot and Sour soup is a popular Chinese soup, and Linda's version of the soup is a delicious and authentic one. Made with boneless pork loin, black mushrooms, and tofu, and flavored with white vinegar, soy sauce, and red pepper sauce, the soup has a sour and spicy taste that is truly comforting. It's perfect for warming up on a cold day or if you're feeling under the weather, and can be served as a main meal or as a starter. This recipe serves 4 people.

Instructions

1.In a bowl, mix together the pork, 1/2 tsp cornstarch, 1/2 tsp salt, and 1/2 tsp soy sauce, then set aside.
2.Soak the dried black mushrooms in hot water for 10 minutes, then cut into thin slices. Cut the tofu into small cubes.
3.In a large pot, bring the chicken broth to a boil and add in the white vinegar, 1 tbsp soy sauce, and 1 tsp salt.
4.Add the pork, mushrooms, and bamboo shoots to the pot and bring back to a boil. Reduce the heat to low and simmer for 3 minutes.
5.In a small bowl, mix together 2 tbsp cornstarch and 2 tbsp cold water, then add to the soup and stir.
6.Add the tofu and white pepper, and bring back to a boil. Slowly pour in the beaten eggs while stirring the soup.
7.Remove from heat and stir in the chopped green onions, red pepper sauce, and sesame oil. Serve hot.
