Ingredients

12 lemons ( thick skinned , meyers , Amalfi , Lisbon , Femminello St. Teresa.. )
1 lime ( thick skinned )
2 bottles 100 proof vodka , divided
2 cups water
2 cups granulated sugar
Limoncello is a popular Italian liqueur that has gained popularity around the world. It is made by steeping lemon zest in vodka and adding a simple syrup. Instructions

1.Use a vegetable peeler to remove the zest from the lemons and lime, being careful to avoid the white pith.
2.In a large mason jar, combine the lemon and lime zest with one bottle of vodka. Close the jar and let it sit at room temperature for 2 weeks, shaking it once a day.
3.After 2 weeks, strain the vodka through a fine mesh sieve and discard the zest. In a large saucepan, combine 2 cups of water and 2 cups of sugar. Cook over medium heat, stirring occasionally, until the sugar has dissolved and the syrup is clear.
4.Remove the pan from the heat and let the syrup cool completely. Once it has cooled, stir in the strained vodka and the remaining bottle of vodka.
5.Pour the Limoncello into clean glass bottles and store in the freezer for at least a day before serving. Serve ice-cold in small glasses.
