Ingredients

15 thick skinned lemons
2 bottles 100 proof vodka
4 cups sugar
5 cups water
Limoncello and Lemoncella are traditional Italian liqueurs made from lemons, vodka, and sugar syrup. They are usually served cold as an after-dinner digestif, or added to cocktails for a zesty twist. Limoncello is a sweet liqueur, while Lemoncella is a bit more tart, and the two drinks can be enjoyed on their own or together. The process of making Limoncello is simple but takes time, as the lemon peels need to steep in the vodka for at least 10 days to extract their flavorful oils. Instructions

1.Peel the lemons using a vegetable peeler, taking care not to include any of the bitter white pith.
2.In a large jar, combine the lemon peels and vodka.
3.Seal the jar and store it in a cool, dark place for at least 10 days, shaking daily.
4.After 10 days, prepare a sugar syrup by bringing the water and sugar to a boil in a saucepan.
5.Remove the lemon peels from the vodka and discard them.
6.Strain the vodka through a coffee filter or cheesecloth into the sugar syrup, stirring well to combine.
7.Let cool to room temperature, then bottle and store in the freezer or refrigerator.
