Ingredients

4 -5 limes
4 ounces butter , cut in chunks
8 ounces sugar
2 large eggs , beaten
Lime, orange or lemon curd is a popular condiment that contains citrus juice, sugar, butter and eggs. It is often used as a spread for toast, scones and other baked goods. One of the great things about this recipe is that it can be made with any of the three fruits, or a combination of them. The tangy flavor of citrus pairs well with sweet baked goods, and the curd's bright yellow color adds a pop of color to any dish.

Instructions

1.Using a vegetable peeler, remove the zest from the citrus fruits, taking care not to include any of the white pith.
2.Squeeze the juice from the fruits and add it to a medium-sized bowl along with the sugar, butter and zest.
3.Place the bowl over a saucepan of simmering water, stirring occasionally until the butter has melted.
4.Once the butter has melted, add the beaten eggs to the mixture and continue to stir until the curd has thickened and coats the back of a spoon.
5.Remove from the heat, and let cool before transferring to a sterilized jar.
6.Using a fine mesh strainer, strain the curd to remove any zest or pieces of egg that may have formed. Store in the refrigerator for up to a week.
