Ingredients

1 1/2 cups lime juice , and pulp ( see note )
1/2 cup dry white wine
500 g gelling sugar ( I used Dr. Oetker 's Gelling sugar , see note )
1 teaspoon ginger , freshly grated
1 1/2 teaspoons lime peel , grated
1 vanilla bean

Instructions

1.In a large pan, combine the lime juice, white wine, and gelling sugar.
2.Heat the mixture over medium heat until the sugar has dissolved.
3.Add in the freshly grated ginger, grated lime peel, and split vanilla bean.
4.Bring the mixture to a boil, stirring constantly.
5.Reduce the heat to a simmer and let the jam cook for 4-5 minutes.
6.Remove from the heat and let cool for a few minutes before removing the vanilla bean.
7.Pour the hot jam into sterilized jars, seal with a lid, and let cool for several hours before storing in the fridge.

PROS

This lime jam has a delicious and unique flavor that pairs well with many different foods.

It also contains no artificial preservatives or additives.

CONS

While this jam is a tasty and unique alternative to traditional fruit jams, it may not be everyone’s cup of tea.

It does contain quite a bit of sugar which may be a concern for some.
