Lime and Almond Friands are small, light, and fluffy baked treats that come from Australia and New Zealand. They are similar to muffins, but they are made with almond meal instead of flour. Friands are usually shaped like muffins, but they have a slightly different texture. They are moist and have a slightly crispy exterior, making them perfect for dessert or tea time. This recipe adds a tart twist to the traditional friand by adding lime zest and juice, making them a refreshing treat on a hot summer day.

Instructions

1.Preheat oven to 375°F (190°C) and grease a standard 12-cup muffin tin or friand pan that holds a little under a 1/2 cup of batter per well.
2.In a medium saucepan, melt the butter over medium heat until it starts to brown and smell nutty. Pour into a heatproof bowl and let cool to room temperature.
3.In a mixing bowl, whisk together almond meal, powdered sugar, and flour. Add egg whites, lime zest and juice, and cooled brown butter, and stir until well combined and free of lumps.
4.Pour batter into muffin cups, filling each cavity about three-quarters of the way full. Top each with three whole blanched almonds, and bake for 20-25 minutes or until golden brown, springy to the touch, and a toothpick inserted into the center comes out clean.
5.Let cool for a few minutes in the pan before transferring to a wire rack to cool completely. Dust with powdered sugar before serving with whipped cream if desired.
