Ingredients

1 bag frozen lima beans
1 can garbanzo beans or ( 16 ounce ) can chickpeas
8 sun-dried tomatoes , chopped
1 small onion , chopped
4 ounces feta cheese , crumbled
1/4 cup of fresh mint , chopped
1/4 cup fresh parsley , chopped
1/4 cup fresh cilantro , chopped
4 tablespoons lemon juice
3 tablespoons olive oil
1 tablespoon fresh garlic , chopped
1/4 teaspoon ground red pepper
salt and pepper , to taste
Lima Bean & Chickpea Salad is a healthy and flavorful salad recipe perfect for a light lunch or dinner. Instructions

1.Cook the frozen lima beans according to package directions.
2.Drain and rinse the can of garbanzo beans or chickpeas in cold water.
3.In a large mixing bowl, combine the cooked lima beans, garbanzo beans or chickpeas, chopped sun-dried tomatoes, chopped onion, crumbled feta cheese, chopped mint, chopped parsley, chopped cilantro and mix well.
4.In a separate mixing bowl, whisk together the lemon juice, olive oil, chopped garlic, ground red pepper, salt and pepper.
5.Pour the dressing over the salad mixture and mix well.
