Ingredients

4 cups sugar
1 lb shredded coconut ( about 7 cups )
1 cup water
1 tablespoon butter
1/2 - 1 teaspoon distilled rose water
1/4 teaspoon cardamom
red food coloring ( optional ) or green food coloring ( optional )
1 small cupcake liners
Lillimala is a sweet coconut candy that is popular in the Maldives. It is made by boiling sugar, water, and shredded coconut until the mixture thickens. Rose water, cardamom, and food coloring are added to give flavor and color to the candy, and it is then scooped into cupcake liners to cool. Lillimala is often served at festivals and special occasions, and it can also be found in local shops and markets throughout the Maldives.

Instructions

1.In a large pot, combine the sugar and the water. Stir over medium heat until the sugar has dissolved.
2.Add the shredded coconut to the pot and continue to stir until the mixture thickens and starts to come away from the sides of the pot, about 15-20 minutes.
3.Add in the butter, rose water, cardamom, and food coloring. Mix well and continue to cook for another 5 minutes, stirring constantly.
4.Remove the pot from the heat and let it cool for 5-10 minutes.
5.Line a baking sheet with the cupcake liners. Scoop a tablespoon of the coconut mixture into each liner and press down with the back of the spoon.
6.Let the Lillimala cool completely and serve.
