Lihamurekepiiras, or meatloaf in sour cream pastry, is a popular dish in Finland and other Nordic countries. It's typically served as a hearty dinner option, perfect for cold winter nights. The tender meatloaf is flavored with mushrooms, onions, and parsley, and baked in a buttery and tangy sour cream pastry. The pastry crust provides a creamy and flaky texture, which makes the dish even more delicious. This recipe is simple to make and perfect for a special occasion dinner or a family meal.

Instructions

1.Preheat oven to 400 degrees F (200 degrees C).
2.For the pastry, mix together flour and salt in a large bowl. Cut in chilled butter until mixture resembles coarse crumbs. Beat egg and sour cream together until smooth, and stir into flour mixture to make dough. Wrap dough in cling film, and refrigerate for at least 1 hour.
3.In a large skillet, cook finely ground meat over medium-high heat until evenly browned. Drain off excess fat, and stir in butter. Add mushrooms, onion, parsley, and cook until tender. Stir in cheese, milk, and egg mixture. Mix well.
4.Roll out dough and press into a greased 9-inch pie pan, letting excess dough hang over edge. Spoon meat mixture into pastry. Fold excess dough over top to enclose filling, crimping edge. Cut a few slits in pastry to vent steam during baking. Brush with milk.
5.Bake for 50-60 minutes, or until crust is golden brown and filling is cooked through. Let cool for 10 minutes before serving.
