Ingredients

14 ounces cauliflower florets
1 onion , small , finely chopped
1/3 cup finely chopped flat leaf parsley
1 teaspoon fennel seed
1/2 teaspoon black pepper ( or more , to taste )
1/3 cup cornflour ( slightly more , as it comes to 100 ml )
1 teaspoon ground cumin
2 teaspoons flaky sea salt
3 eggs , largest size
water ( see directions )
oil ( for frying , I use a mixture of canola and olive )
3/4 cup yoghurt , Greek style
3 tablespoons chermoula , paste ( or try harissa , but slightly less )
1 teaspoon salt

Instructions

1.In a large pot, add cauliflower florets and cover with water. Bring to boil and cook for 8-10 minutes or until cauliflower is tender.
2.Drain cauliflower and let it cool slightly. Roughly chop it into small pieces.
3.In a large bowl, add chopped cauliflower, finely chopped onion, and finely chopped flat leaf parsley.
4.In a small pan, roast fennel seeds until fragrant. Add them to the bowl.
5.Add cornflour, ground cumin, flaky sea salt, and black pepper to the bowl and mix all ingredients well.
6.Add eggs to the bowl and mix again making sure all ingredients are well combined.
7.Heat the oil in a large frying pan over medium heat.
8.Spoon the mixture into the frying pan, making sure each fritter is about 2-3 tablespoons in size.
9.Fry each side for about 3-4 minutes or until golden brown.
10.In a small bowl, mix yoghurt, chermoula paste, and salt to make a dip.
11.Serve fritters with the dipping sauce and enjoy!
