Ingredients

20 ounces lean ground turkey
1 cup onion , chopped ( or 1 small onion )
1 cup green pepper , chopped ( or one medium pepper )
1/2 cup canned jalapeno slices , chopped
1 can diced tomatoes ( I used the petite diced jalapeno kind )
1 can black beans
1/4 cup taco seasoning
12 corn tortillas
2 cups salsa ( I used homemade but you can use your favorite brand )
1 cup light sour cream
1 cup reduced-fat Mexican cheese blend , shredded
This lightened-up Mexican casserole is a healthier version of a classic Mexican dish. It's made with lean ground turkey, canned black beans, diced tomatoes, and a variety of vegetables like onion, green pepper, and jalapenos. Instructions

1.Preheat oven to 350 degrees F.
2.In a large skillet over medium-high heat, cook ground turkey until no longer pink.
3.Add onion, green pepper, and canned jalapeno to the skillet and cook for an additional 3-4 minutes until the vegetables are slightly softened.
4.Add canned diced tomatoes, canned black beans, and taco seasoning to the skillet and stir until combined. Remove from heat.
5.Spray a 9x13 inch baking dish with cooking spray. Layer the bottom with 6 corn tortillas. Add half of the turkey mixture on top, spreading it out evenly.
6.Top with 1 cup of salsa, 1/2 cup of light sour cream, and 1/2 cup of shredded Mexican cheese.
7.Layer another 6 corn tortillas on top and add the remaining turkey mixture. Spread it out evenly.
8.Top with 1 cup of salsa, 1/2 cup of light sour cream, and 1/2 cup of shredded Mexican cheese.
9.Bake for 25-30 minutes until hot and bubbly. Let cool for a few minutes before serving.
