1 1/2 lbs yukon gold potatoes or 1 1/2 lbs red potatoes , halved
6 cups chopped cabbage
4 garlic cloves , minced
1 teaspoon chicken bouillon powder
3 green onions , chopped
1/2 cup fat-free cream cheese
1/2 cup fat free sour cream
1/4 cup skim milk
1/4 cup reserved cooking water
1 teaspoon salt
1/2 teaspoon black pepper
Lightened up Irish Potatoes are a healthier take on the classic Irish dish of mashed potatoes and cabbage, also known as colcannon. This dish is often served on St. Patrick's Day in Ireland and in Irish communities around the world. Traditionally, colcannon is made with mashed potatoes, cabbage, butter, and cream. In this recipe, we've lightened up the dish by using fat-free cream cheese and sour cream, and skim milk. The result is a creamy and flavorful dish that's perfect for any occasion.

Instructions

1.Wash the halved potatoes and place them in a large pot. Cover with water and salt and bring to a boil over high heat.
2.Reduce heat to maintain a simmer and cook for 20 minutes or until the potatoes are tender.
3.Reserve 1/4 cup of the cooking water and drain the rest.
4.Return the potatoes to the pot and add the chopped cabbage, minced garlic, chicken bouillon powder, chopped green onions, fat-free cream cheese, fat-free sour cream, skim milk, reserved cooking water, salt, and black pepper.
5.Mash the mixture with a potato masher or immersion blender until smooth and creamy.
6.Taste and adjust seasoning as needed.
7.Serve immediately and enjoy!
