Ingredients

4 cups mashed sweet potatoes or 4 cups mashed yams
4 1/2 - 5 tablespoons light brown sugar
1/3 cup evaporated skim milk ( you may have to use more or less to reach desired consistency )
2 tablespoons margarine , at room temperature
8 teaspoons freshly squeezed orange juice
1/2 teaspoon freshly grated orange rind
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 pinch ground allspice
1 pinch ground cloves
2 1/2 - 3 cups miniature marshmallows

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Microwave or bake sweet potatoes until they are soft enough to mash.
3.In a large mixing bowl, combine mashed sweet potatoes, brown sugar, evaporated skim milk, margarine, orange juice, orange rind, vanilla extract, salt, cinnamon, nutmeg, allspice, and cloves. Mix well.
4.Pour sweet potato mixture into a 9x13 inch baking dish and press down evenly.
5.Cover sweet potato mixture with a layer of miniature marshmallows and bake for 25-30 minutes or until marshmallows are golden brown.
6.Once finished, remove from oven and let cool for a few minutes before serving.
