Liege waffles are a popular street food in Belgium, made with chunks of pearl sugar that caramelize and create a crispy sweet exterior. The dough itself is enriched with butter and honey, making for a rich and decadent waffle that is perfect for special occasions or lazy weekend mornings. While traditional belgian waffles are light and fluffy, these liege waffles are satisfyingly dense and chewy, providing a perfect contrast to the crispy exterior. Enjoy them on their own or top with your favorite fruit, cream, or syrup!

Instructions

.In a small bowl, stir together the active dry yeast, scalded milk, 2 tablespoons of warm water, and 2 teaspoons of sugar. Set aside for 5 minutes until it begins to foam.
.In a large mixing bowl, whisk together the bread flour, light brown sugar, salt, and baking powder.
.Add in the beaten egg and yeast mixture and mix until just combined.
.Add in the soft unsalted butter, honey, and vanilla and mix until the dough comes together and becomes smooth.
.Mix in the belgian pearl sugar until well distributed throughout the dough.
.Cover the bowl with a damp towel and let the dough rise in a warm place for 1-2 hours.
.Preheat your waffle iron to medium-high heat. Once hot, spoon the dough onto the griddle and cook until golden-brown, about 3-4 minutes per waffle.
.Serve hot and enjoy!
