Ingredients

1 butternut squash
2 cups water
1/2 tablespoon salt
7 garlic cloves
1/4 cup olive oil
1 tablespoon sweet paprika

Instructions

1.Peel and chop the butternut squash into small chunks.
2.Bring the water to a boil in a large pot on medium heat and add salt.
3.Add the chopped squash and garlic cloves and cook until tender and soft.
4.Drain the squash and garlic and let it cool.
5.Mash the squash and garlic into a smooth puree.
6.Add olive oil and sweet paprika to the puree and mix well.
7.Your Libyan Pumpkin Dip is ready to be served with pita bread, crackers or any of your favorite dips!
