350 g spinach
sesame oil

Instructions

1.Fill a large pot with water and bring to a boil.
2.Rinse the lamb's quarters in cold water and add to the pot of boiling water.
3.Blanch for 10 seconds and remove immediately. Rinse with cold water to cool and drain.
4.In a large bowl, mix together the sesame oil, soy sauce, crushed red pepper flakes, Chinese black vinegar, and salt.
5.Add the blanched lamb's quarters to the bowl and toss to coat.
6.Serve immediately or refrigerate until ready to serve.
