14 dried arbol chiles , stemmed
2 tablespoons scallions , minced
2 tablespoons toasted sesame oil
2 tablespoons rice vinegar

12 large shiitake mushrooms , stemmed thinly sliced

Instructions

1.In a dry skillet over medium heat, toast the dried arbol chiles until fragrant, shaking occasionally, for about 30 seconds.
2.In a medium bowl, whisk together the minced scallions, toasted sesame oil, rice vinegar, and vegetarian soy sauce. Set aside.
3.Clean the mushrooms with a damp paper towel and thinly slice the mushrooms. Place them in a large bowl and season with kosher salt, to taste. Set aside.
4.Using a food processor, grind the toasted chiles into a fine powder. Add the chile powder to the bowl with the mushrooms and toss until well-coated.
5.Pour the dressing over the mushrooms and toss again until well-coated. Refrigerate for at least 30 minutes to let the flavors meld together.
6.Serve chilled and enjoy!
