Ingredients

3/4 cup dried brown lentils
3 tablespoons olive oil , divided
1 onion , diced
2 teaspoons curry powder
1 teaspoon ground cardamom
1 teaspoon ground ginger
1 teaspoon ground cumin
1 pinch cayenne pepper ( optional )
1 yam , peeled and sliced
1/2 cup water
1/4 cup coconut milk
6 dried apricots , chopped
1/2 teaspoon sea salt
1 package samosa pastry ( egg roll wrappers )
Originating from the Indian subcontinent, Samosas are deep-fried or baked snack food that is typically triangular in shape. Samosas are popular street food in India, Pakistan, Indonesia, and many other countries. Lentil samosas are a popular variation of samosas that use the fiber and protein from lentils instead of meat. Lentil samosas are a great vegetarian or vegan appetizer that makes you feel full for longer.

Instructions

1.Preheat oven to 375 F.
2.Cook lentils in boiling water for approximately 20 minutes or until tender, then drain.
3.Heat 2 tablespoons of olive oil in a pan over medium heat. Add the onion and fry until translucent, about 5 minutes.
4.Add into the pan curry powder, ground cardamom, ground ginger, ground cumin, and cayenne pepper if you like some spice. Mix thoroughly and fry for another 2 minutes.
5.Stir into the pan lentils, sliced yam, water, coconut milk, chopped apricots, and sea salt.
6.Fry over low heat for 8-10 minutes until the texture is even. Allow it to cool down.
7.Cut egg roll wrappers in half to make triangles. Distribute 1 tablespoon of lentil mixture in the middle of each triangle.
8.Fold the larger edge of the triangle over the lentil mixture and align the opposite corner to form a triangular-shaped pocket.
9.Place the samosas on the baking sheet, brush them with the remaining olive oil on all sides, and bake for 20-25 minutes until golden brown and crispy.

CONS
