Ingredients

1 cup red lentil ( or any lentils )
1 tablespoon olive oil
2 medium onions , finely sliced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
14 ounces chickpeas , drained
1 egg ( or Ener-G Egg Substitute )
1/4 cup fresh parsley , chopped
2 tablespoons fresh coriander , chopped
2 1/4 cups breadcrumbs , stale
1/4 cup flour or 1/4 cup rice flour
1/2 cup sour cream or 1/2 cup tofu sour cream
1/2 cup cream or 1/2 cup soya cream
1 garlic clove , well crushed
3 tablespoons fresh coriander , chopped
Lentil & Chickpea Burgers with Coriander Cream is a healthy, vegan-friendly recipe that is perfect for a quick and simple dinner. Instructions

1.Cook the lentils in boiling water for around 25 minutes until tender and drain.
2.In a large frying pan, heat the olive oil and add the onions, cumin, coriander, and garam masala.
3.Cook until the onions are soft, then add the chickpeas and lentils, and cook for a further 5 minutes.
4.Remove from the heat and allow to cool.
5.Add the egg, parsley, coriander, and breadcrumbs, and mix thoroughly.
6.Divide the mixture into patties and dust with flour or rice flour.
7.Heat a little oil in a frying pan and cook the patties until golden brown on both sides.
8.To make the coriander cream, mix together the sour cream (or tofu sour cream), cream (or soya cream), garlic, and coriander.
9.Serve the burgers with the coriander cream and your favorite salad vegetables.
