Ingredients

9 ounces toovar dal
5 1/2 cups water
1/4 teaspoon turmeric
1 can chopped stewed tomatoes
8 -12 fresh curry leaves ( if you 're using dried double the amount )
2 tablespoons olive oil
1 1/2 teaspoons black mustard seeds
1/4 teaspoon ground fenugreek
1 tablespoon curry powder ( I use hot curry powder )
1 onion , chopped
9 ounces cabbage , shredded ( that 's roughly 1 small head of cabbage )
1/2 lemon , juice of
salt , to taste
pepper , to taste
fresh coriander , chopped to serve
Lentil, cabbage and tomato dal is a classic vegetarian dish that is packed with flavor and nutrition. This recipe is perfect for a hearty and healthy weeknight meal. Instructions

1.Rinse the lentils well and then drain and add to a pot with the 5 1/2 cups of water and turmeric. Bring to a boil then lower the heat, cover and simmer gently for 1 hour.
2.When the lentils are cooked and soft remove any scum that may have appeared, then add the canned chopped tomatoes, curry leaves and some salt mix well, then simmer for 10 minutes.
3.Meanwhile heat the oil in another saucepan and add the mustard seeds when they pop add the fenugreek and the onion and fry until the onion is soft.
4.Add the curry powder to the onion mix and fry for a minute then add this to the lentils along with the cabbage.
5.Mix well and simmer for another 10 minutes or until the cabbage is tender.
6.Add the juice of half a lemon and taste the dal adding any extra salt, pepper or lemon juice as needed.
7.Serve with fresh coriander.

PROS

This dal is an excellent vegetarian source of protein and fiber due to the inclusion of lentils.

The cabbage and tomatoes provide plenty of vitamins and minerals, making it a healthy choice.

CONS

This recipe may require some effort as several ingredients need to be prepared and cooked separately.

Some people may not like the taste of cabbage in their dal.
