Ingredients

300 g sweet potatoes , peeled & cut into 5mm rounds
1 tablespoon olive oil
400 g lentils , rinsed , well drained
1 egg
1/2 cup breadcrumbs
1/4 teaspoon chili flakes
1/4 cup red pepper , strips ( marinated )
1 tablespoon sesame seeds
2 green onions , finely chopped
200 g fat free Greek yogurt
2 tablespoons mayonnaise
2 tablespoons flat leaf parsley , chopped
4 pita bread , split
40 g mixed salad greens
1 lebanese cucumber , sliced
Lentil burgers are a healthy and tasty vegan alternative to traditional beef burgers. Made with mashed lentils, sweet potato, and breadcrumbs, they are a filling and satisfying meal that is perfect for lunch or dinner. These burgers are flavored with red pepper strips, sesame seeds, chili flakes, and green onion, which give them a spicy and slightly nutty taste. They are served inside pita bread with mixed salad greens and parsley mayo, which adds creaminess and freshness to the dish.

Instructions

1.Preheat the oven to 220C (200C fan)/425F/gas 7 and line a large baking tray with parchment paper.
2.Combine the sweet potato and oil in a bowl, season with salt, then mix well.
3.Spread the sweet potato on the prepared tray in a single layer.
4.Roast for 15 minutes or until lightly caramelized around the edges.
5.Transfer the sweet potato to a large mixing bowl.
6.Mash the lentils with a fork or potato masher.
7.Add the lentils, egg, breadcrumbs, chili flakes, green onion, red pepper strips, sesame seeds and a pinch of salt to the bowl with the sweet potato. Mix well.
8.Using wet hands, form 4 patties with the mixture.
9.Heat a non-stick frying pan over medium heat. Cook the patties for 3-4 minutes on each side or until firm and golden.
10.To make the parsley mayo, combine the yogurt, mayonnaise, and parsley in a small bowl. Season well with salt and pepper.
11.To assemble the burgers place each patty inside a pita, top with a generous dollop of parsley mayo and mixed salad greens. Serve with sliced Lebanese cucumber on the side.
