Ingredients

1 3/4 cups water
3/4 cup dry lentils , rinsed and drained ( yellow , green or red )
1/2 cup chopped onion
1 -2 tablespoon chopped fresh cilantro , plus more for garnish
1/2 teaspoon salt
2 garlic cloves , minced
1 teaspoon chili powder
1/4 teaspoon turmeric
4 corn tortillas
cooking spray
2 cups assorted chopped assorted fresh vegetables ( such as broccoli , tomato , zucchini , and or or yellow summer squash )
3/4 cup shredded monterey jack cheese

Instructions

1.In a medium saucepan, bring water to boil and then add lentils, onion, cilantro, salt, garlic, chili powder, and turmeric.
2.Reduce heat and simmer for 20-30 minutes until lentils are tender and water is absorbed.
3.Preheat oven to 400°F and spray a baking sheet with cooking spray.
4.Place tortillas on sheet and bake for 5 minutes until slightly crisp.
5.Remove from oven and top each with lentil mixture, vegetables, and cheese.
6.Return to oven and bake for an additional 5-7 minutes until cheese is melted and bubbly.
7.Garnish with fresh cilantro and serve hot.
