1 yellow onion , chopped
2 celery ribs , chopped
2 small carrots , peeled and chopped
1/4 cup olive oil
2 garlic cloves , chopped

2 1/4 cups green lentils
8 cups chicken stock , 64 fl.ozs . or 8 cups meat stock , 64 fl oz
1 small escarole , chopped
salt & freshly ground black pepper
1/2 cup grated parmigiano-reggiano cheese or 1/2 cup pecorino romano cheese

Instructions

1.Rinse the lentils under cold water, pick any debris or discolored lentils as needed and set aside.
2.Heat the olive oil in a large pot over medium heat.
3.Add the onions, celery and carrots, sauté for 4 minutes or until soft.
4.Add the chopped garlic, cook and stir for 30 seconds.
5.Add the chopped tomatoes with juice and cook for 10 minutes or until most of the liquid has evaporated.
6.Add the pre-soaked lentils and stock, bring the soup to boil then reduce the heat to low, simmer for 30 minutes, or until the lentils are tender.
7.Add the chopped escarole and cook for another 5 minutes.
8.Season with salt and pepper to taste. Serve hot, top with grated cheese if desired.
