Ingredients

Salad :
4 cups boiling water
1 cube vegetable bouillon
1 cup dry lentils
1 cup bulgur
2 cups boiling water
1 cup minced fresh parsley
1/2 cup minced sweet onion
Dressing :
1/4 cup chicken broth
2 tablespoons red wine vinegar
1 tablespoon cider vinegar
1 tablespoon Dijon mustard
1 tablespoon olive oil
2 cloves garlic , minced
1 teaspoon dried oregano
1/2 teaspoon Worcestershire sauce
1/2 teaspoon dried basil
1/4 teaspoon ground cumin
1/4 teaspoon salt , or to taste
freshly ground black pepper to taste
1/2 cup thinly sliced scallions

Instructions

1.In a large pot, add 4 cups boiling water and vegetable bouillon. Add dry lentils, cover, and cook for about 20-30 minutes or until tender.
2.In another bowl, add bulgur and 2 cups of boiling water. Cover and let stand for about 20 minutes or until all the liquid is absorbed.
3.In a separate bowl, whisk together the chicken broth, red wine vinegar, cider vinegar, dijon mustard, olive oil, minced garlic, dried oregano, Worcestershire sauce, dried basil, ground cumin, salt and black pepper to taste.
4.In a large mixing bowl, combine the cooked lentils, bulgur, minced parsley, sweet onion, and thinly sliced scallions. Drizzle the salad dressing over the mixture and toss to combine. Serve chilled.
