Ingredients

1 teaspoon vegetable oil , preferably canola oil
1 cup finely chopped onion
1 1/2 cups long grain white rice
3 cups chicken stock ( vegetable stock makes this vegetarian/vegan )
1 grated lemon , rind of
1 tablespoon freshly squeezed lemon juice
1/2 cup coarsely chopped flat-leaf Italian parsley
fresh ground pepper
Lemony Rice Pilaf is a classic side dish and one of the easiest to prepare rice recipes. It is the perfect dish to serve with chicken, meat or fish, and works equally well as a vegan or vegetarian main. This dish packs a tangy flavor from the lemon and parsley, and has a nice balance of aromatic spices and textures. Instructions

1.In a large saucepan, heat the oil over medium heat and add onion. Cook, stirring occasionally, until translucent and starting to brown.
2.Add in the rice and cook, stirring, for about 1 minute, until the grains are lightly toasted.
3.Pour in the stock and add the lemon rind. Season to taste with pepper.
4.Increase the heat to high and bring the mixture to a boil.
5.Cover the pot with a tight-fitting lid and reduce the heat to low. Cook at a gentle simmer for about 18-20 minutes, or until the rice is cooked through and the liquid has been absorbed.
6.Remove from the heat and let stand, covered, for about 5 minutes to allow the rice to absorb any remaining liquid.
7.Add in the lemon juice and chopped parsley, fluff the rice with a fork to combine.
8.Serve warm as a side dish or use it as a base to add vegetables, protein or sauce to.
