Ingredients

2 stalks lemongrass
1/4 cup sugar
2 limes , sliced into 8 lime wedges
1 large handful fresh Thai basil ( also called pepper basil )
2 teaspoons sugar
8 ounces white rum
club soda , as required to top up
ice , to serve
lemongrass , stalks trimmed ( optional , to use as stir sticks )
This Lemongrass, Lime & Thai Basil Mojito is a refreshing twist on the classic Mojito. The use of lemongrass, Thai basil and a squeeze of lime adds a unique and exotic flavor to this deliciously refreshing cocktail. Instructions

1.Cut the lemongrass stalks into 4 and place them in a tall glass with 2 teaspoons of sugar.
2.Use a muddler or the back of a spoon to muddle (crush) the lemongrass to release its flavor and aroma.
3.Squeeze in the juice of 4 lime wedges and add the remaining lime wedges and Thai basil leaves to the glass.
4.Muddle again to release the flavors of the lime and Thai basil.
5.Pour in the white rum and stir.
6.Fill the glass with ice and top up with club soda.
7.Optionally, use trimmed lemongrass stalks as stir sticks before serving.
