Ingredients

6 cups chicken stock
1 tablespoon oil
1/2 cup enoki mushroom
1 teaspoon crushed red pepper flakes ( gochugaru )
3 lemongrass , stalks bruised
1/2 onion , halved
1 thin piece ginger
1/2 cup bean sprouts
1 cup cabbage kimchi
2 garlic cloves , minced
2 tablespoons soy sauce
7 ounces egg noodles
1 large chicken breast
scallion , thinly sliced ( garnish )

This Lemongrass Chicken Soup recipe is a perfect balance of spicy and tangy flavors, with the addition of egg noodles and shredded chicken making it a deliciously hearty meal. Instructions

1.In a large pot, heat 1 tablespoon of oil over medium heat. Add 2 minced garlic cloves, 1/2 cup enoki mushroom, 1 teaspoon crushed red pepper flakes (gochugaru), 3 bruised lemongrass stalks, 1/2 halved onion, and 1 thin piece of ginger. Cook for 2-3 minutes until fragrant.
2.Next, add 6 cups of chicken stock and 2 tablespoons of soy sauce. Bring the soup to a boil and add in 1 large chicken breast. Reduce heat and let simmer for 20-25 minutes until the chicken is cooked.
3.Once chicken is cooked, remove it from the pot and shred with a fork. Set aside.
4.In the same pot, cook 7 ounces of egg noodles according to package directions. Once cooked, drain and set aside.
5.Add 1 cup of cabbage kimchi and 1/2 cup of bean sprouts to the pot. Let cook for 2-3 minutes.
6.Divide noodles between serving bowls. Add shredded chicken to the bowls and ladle soup over the noodles and chicken. Garnish with sliced scallions and lime wedges as desired.
