Instructions

1.Peel the tomatoes by cutting an x at the bottom and parboiling them for 30 seconds, then immediately placing them in ice water and peeling the skin.
2.Cut the peeled tomatoes into quarters and remove the seeds. Dice them and set aside.
3.Heat the olive oil in a pan over medium heat and sauté the garlic until fragrant.
4.In a large bowl, combine the diced tomatoes, cilantro, lemon juice, lemon zest, green bell peppers, diced mangoes, minced garlic, vinegar and diced habanero peppers.
5.Toss everything together and serve chilled.
