Ingredients

1 cup flour

1/2 cup cold butter , cut into small pieces
2 eggs
1 cup white sugar

1/4 cup lemon juice
1 cup desiccated coconut
1/4 cup candied ginger , finely chopped

Instructions

1.Preheat the oven to 350F/180C. Grease and line a 9 inch square baking dish.
2.In a bowl, combine flour and sugar. Add cold butter using a fork or pastry cutter until the mixture resembles breadcrumbs.
3.Press the mixture into the prepared baking dish and bake for 20 minutes until golden brown.
4.While the crust is baking, mix eggs, sugar, flour, baking powder, lemon peel and juice together in a separate bowl until smooth.
5.Fold in desiccated coconut and candied ginger into the mixture.
6.Pour the mixture over the baked crust and continue baking for 25 minutes, or until set and golden brown.
7.Cool the dish in the pan then cut into squares.
8.Dust with icing sugar before serving.
