Ingredients

2 1/4 kg leg of lamb
1 lemon , cut into small triangles
1 fresh garlic , cut into slivers
sea salt
fresh ground pepper
plain flour
3 cups chicken stock
200 g diced tomatoes , canned
1/2 tablespoon mint jelly

Instructions

1.Preheat your oven to 180°C.

5.Bake in the preheated oven for 1 hour and 45 minutes.
6.Remove the foil 30 minutes before the end of the cooking time and spread the mint jelly on top of the lamb to form a crust.
7.Return to the oven and bake for the remaining 30 minutes.
