Ingredients

4 tablespoons butter , divided
2 tablespoons olive oil
1/4 cup finely chopped onion
1 tablespoon finely grated fresh lemon zest
1 1/2 cups uncooked arborio rice ( or other short-grain white rice )
4 cups warm water
2 tablespoons dry white wine
1 tablespoon fresh squeezed lemon juice
3 teaspoons vegetable stock base ( or instant bouillon granules )
1/4 teaspoon fresh ground black pepper
2 tablespoons freshly grated parmesan cheese
8 ounces medium raw shrimp , peeled and deveined
1 teaspoon finely chopped fresh garlic
1 teaspoon finely chopped fresh flat-leaf Italian parsley
1 teaspoon finely grated fresh lemon zest

Instructions

1.In a large saucepan over medium heat, add 2 tablespoons of butter and 2 tablespoons of olive oil. Once melted, add in the chopped onion and grated lemon zest. Cook until the onions are translucent.
2.Stir in the uncooked rice and continue to cook until the rice is lightly toasted.
3.In a separate pot, warm the water and add in the white wine, lemon juice, vegetable stock base, and freshly ground black pepper.
4.Slowly pour the warm liquid mixture into the rice pot, a ladleful at a time while stirring continuously for 25-30 minutes, until the risotto is thick and creamy.
5.Stir in 2 tablespoons of butter and freshly grated parmesan cheese into the rice mixture.
6.For the sauteed shrimp, heat a separate pan over medium heat. Add 2 tablespoons of butter, chopped garlic, chopped parsley, and grated lemon zest to the pan. Once the butter is melted and hot, add in the peeled and deveined shrimp. Cook until pink and slightly curled, then set aside.
7.Serve the lemon risotto with sauteed shrimp and enjoy!
