Ingredients

2 cups basmati rice
1/4 cup masoor dal
1/4 cup channa dal
1 medium onion
2 lemons
25 g butter
3/4 teaspoon mustard seeds
3/4 teaspoon cumin seed
1 teaspoon turmeric powder
2 bay leaves
2 -3 cloves
3 -4 cinnamon sticks
4 curry leaves
5 -6 cashew nuts ( chopped )
coriander sprig
dried parsley
fresh lemon rind

Instructions

1.Rinse the rice with cold water until the water runs clear and place it in a large pot or rice cooker with 3 cups of water. Bring the water to a boil, reduce the heat to low, cover, and cook for 15-20 minutes or until the rice is cooked through and fluffy.
2.In a separate pan, dry roast the masoor dal and channa dal over medium heat for approximately 5-7 minutes or until the dals turn golden brown. Take them off the heat and set them aside.
3.In a large saucepan or wok, melt the butter over medium heat and add the mustard seeds and cumin seeds, stirring until they pop. Add the bay leaves, cloves, and cinnamon sticks and cook for 1-2 minutes.
4.Add the chopped onion and sauté until the onion turns golden brown.
5.Add the turmeric powder and curry leaves, and stir for 1-2 minutes.
6.Add the roasted dals, chopped cashew nuts, lemon rind, and salt, stirring well to combine.
7.Reduce the heat to low, add the cooked rice, and stir until everything is well combined.
8.Squeeze the lemon juice over the top, garnish with coriander and dried parsley, and serve.
