Ingredients

1/2 cup dry quinoa
2 cups vegetable broth
1 can garbanzo beans ( drained and rinsed )
1 cup cherry tomatoes , cut in half
2 avocados , diced
2 cups spinach
1 bunch cilantro
1/4 cup onion
2 small garlic cloves
2 lemons , juice of
1 lemon , zest of
2 teaspoons Dijon mustard
2 teaspoons olive oil
1 teaspoon agave nectar ( or honey )
1/2 teaspoon cumin
1 dash salt and pepper
This Lemon Quinoa Cilantro Chickpea Salad is a refreshing and nutritious dish that can be served as a main course or a side dish. Instructions

1.Rinse quinoa in fine mesh strainer and drain well.
2.Heat 2 cups vegetable broth and the rinsed quinoa to a boil in a saucepan. Reduce heat to low, cover, and simmer until the quinoa is tender (15-20 minutes).
3.Peel the garlic, chop into small pieces and put in a bowl. Juice the 2 lemons and zest 1 lemon. Add the lemon juice and zest to the same bowl.
4.Add Dijon mustard, olive oil, agave nectar, cumin, and salt and pepper to the bowl with garlic and lemon.
5.Drain and rinse the garbanzo beans and add to the bowl.
6.Rinse and chop the cilantro and add to the bowl.
7.Rinse and chop the spinach and add to the bowl.
8.Chop the onion and cherry tomatoes in half and add to the bowl.
9.Stir everything together until well mixed and put in the fridge for at least 20 minutes to chill.
