5 cups vegetable stock , can use store bought low sodium vegetable broth or stock
2 medium onions , finely diced
2 tablespoons olive oil
2 garlic cloves , minced
1 1/2 cups arborio rice
3/4 lemon , juice and zest of
1 cup freshly grated parmesan cheese
1/2 cup freshly grated parmesan cheese , garnish
1/2 cup shredded mozzarella cheese
1 cup half-and-half
3 tablespoons finely chopped parsley
5 cups panko breadcrumbs
4 cups vegetable oil , for frying

Instructions

1.Heat the vegetable stock in a large pot and bring it to a simmer.

6.In a shallow dish, mix together Panko breadcrumbs and 1/2 cup of Parmesan cheese.
7.Heat vegetable oil in a deep pot to 375F and fry the balls in batches until they are golden brown.
8.Drain them on paper towels and serve warm.
