Ingredients

1 1/2 cups self raising flour
1 cup whole meal flour
1 teaspoon baking powder
3/4 cup caster sugar
3 eggs ( lightly beaten )
2 lemons , juice and zest of ( I prefer lemon ) or 2 limes , juice and zest of ( I prefer lemon )
1 cup roasted raw macadamia nuts ( leave whole )

Instructions

1.Preheat the oven to 180°C (160°C fan).
2.Combine self-raising flour, wholemeal flour and baking powder in a large bowl.
3.Add in caster sugar, eggs, lemon or lime juice and zest.
4.Roughly chop macadamia nuts and add to the mixture.
5.Combine all ingredients together until well combined.
6.Knead the mixture on a floured surface until it becomes a uniform dough.
7.Form the dough log approximately 6cm thick and place on the baking tray lined with baking paper.
8.Bake in the pre-heated oven for 25-30 minutes until golden brown.
9.Remove from the oven and allow to cool for 10 minutes.
10.Slice the log using a serrated knife into 1-2cm wide biscotti pieces and place them on the baking tray.
11.Bake for another 10 minutes or until they turn light brown in color. Turn them over midway, so both sides can be baked evenly.
12.Remove from the oven and serve with tea or coffee.
