Ingredients

800 g Brussels sprouts
1 1/2 1 tablespoon olive oil or 1 tablespoon vegetable oil
200 g cubed smoked bacon or 200 g smoked lardons
1 lemon , juice and zest of
black pepper
salt

Instructions

1.Preheat your oven to 200C/180C fan/gas mark 6.
2.Trim and halve 800g Brussels sprouts, add a sprinkle of salt and a drizzle of oil or use 1 and a half tablespoon of olive oil or 1 tablespoon of vegetable oil.
3.Arrange the Brussels sprouts in a roasting tin and roast for about 20-25 mins, until they are tender and starting to brown.
4.Meanwhile, roughly chop 200g cubed, smoked bacon or smoked lardons and fry in a hot pan until crisp. Once crispy, remove from the heat.
5.In a separate pan, add melted butter, black pepper, the zest and juice of 1 lemon and cook until the butter changes golden brown color.
6.When the Brussels sprouts are cooked, add the butter mixture and crispy bacon and toss until everything is well coated. Serve and enjoy!
