Lemon grass beef parcels are a popular appetizer in Vietnamese cuisine, often served at family gatherings and special occasions. The unique combination of flavors and textures make them a crowd-pleaser, with the crunch of the bean sprouts and water chestnuts complementing the fragrant, citrusy flavor of the lemongrass. These parcels are baked instead of fried for a healthier twist on the traditional Vietnamese recipe. Serve them piping hot with a side of sweet chili sauce for dipping.

Instructions

.Soak the vermicelli in boiling water for 3 minutes, then drain and chop into small pieces.
.In a large mixing bowl, combine the ground beef, bean sprouts, lemongrass, lemon juice, fish sauce, and sliced spring onions. Mix well.
.Stir in the chopped water chestnuts and soaked vermicelli.
.Preheat oven to 375°F (190°C).
.Place the rice paper sheets one at a time in a bowl of hot water and soak for 10 seconds, until soft and pliable.
.Place the soaked rice paper sheet on a clean, flat surface. Add a few mint leaves to the center and a spoonful of the beef mixture.
.Fold the paper around the filling tightly, folding in the sides like a burrito. Repeat until all 12 parcels are made.
.Place the parcels on a baking tray lined with parchment paper and bake in the preheated oven for 15-20 minutes, until golden brown and cooked through.
.Serve hot with sweet chili sauce for dipping.
