1 egg
plain flour , for dusting

Instructions

1.Preheat vegetable oil in a deep frying pan over medium heat
2.In a food processor combine the spring onion, ginger, lemongrass, coriander, garlic, sugar and soy sauce.
3.Add the breadcrumbs to the mixture and mix in the tofu. Pulse until the desired texture is reached.
4.Beat the egg in a bowl and place the plain flour and breadcrumbs in separate bowls.
5.Using wet hands, shape the mixture into nuggets.
6.Dust each nugget in the flour, then coat with the egg mixture and coat in breadcrumbs.
7.Fry the nuggets in the preheated oil for 3-4 minutes or until golden brown.
8.Serve hot or cold with your favourite dipping sauce.
