Ingredients

1 cup sugar

1 tablespoon flour ( heaping )
1 1/4 cups milk
1 lemon ( juice and rind )
2 egg yolks
2 egg whites
1 pinch salt

Instructions

1.Preheat oven to 350°F (180°C).
2.In a saucepan, mix sugar, flour, and salt; stir in milk and lemon juice until smooth.
3.Cook and stir over medium heat until thickened and bubbly. Reduce heat, cook and stir for 2 minutes longer.
4.Remove from the heat. Stir a small amount of hot mixture into egg yolks; return all to pan, stirring constantly.
5.Bring to a gentle boil; cook and stir for 2 minutes. Stir in butter and lemon peel.
6.In a small bowl, beat egg whites until stiff peaks form. Fold into lemon mixture.
7.Pour into an ungreased 1-1/2-qt. baking dish.
8.Place the dish into a baking sheet with about 1 inch of hot water in it. This will create a water bath which prevents the pudding from over-browning and gives a really creamy texture.
9.Bake until a knife inserted in the center comes out clean, approximately 35-40mins. Cool for at least 20 minutes before serving.
