100 g walnuts
1/2 cup desiccated coconut
2 large lemons
3 eggs , seperated
80 g butter , softened
3/4 cup caster sugar
1/2 cup self-rising flour
150 ml milk
6 tablespoons double cream
600 g rhubarb
50 g butter
2 tablespoons caster sugar
50 ml water
1/2 teaspoon cinnamon

Instructions

1.Preheat the oven to 180°C. Grease a 1.5-litre baking dish.
2.Toast the walnuts and coconut in a dry frying pan over medium heat, stirring constantly until golden. Allow to cool.
3.In a separate bowl, zest both lemons and set aside.
4.In another bowl, cream the butter and sugar together until pale and fluffy. Whisk in the egg yolks and lemon zest. Sift in the flour and salt, and mix well.
5.Gradually stir in the milk and walnuts mixture until well combined.
6.In a separate bowl, whisk the egg whites until stiff peaks form. Fold the egg whites into the pudding mixture.
7.Pour the mixture into the baking dish and smooth the surface.
8.Place the dish into a lined roasting tray. Pour hot water around the dish until it comes halfway up the sides of the baking dish.
9.Bake for 50 minutes, or until golden brown.
10.Serve hot with poached rhubarb.
