Ingredients

6 large artichokes
1/2 cup white vinegar
1 medium onions or 1 large onion , finely diced
1/2 cup fresh dill , chopped
1/3 cup olive oil
1 1/2 cups chicken broth
1/4 cup fresh lemon juice
salt & freshly ground black pepper , to taste
2 egg yolks
3 tablespoons fresh lemon juice
1 teaspoon arrowroot or 1 teaspoon cornstarch

Instructions

1.Rinse the artichokes and remove the tough outer leaves.
2.Cut off the top 1/2 of each artichoke.the top third of each artichoke and trim off the tips of the leaves and remove the stem.
3.Place the onions, olive oil, vinegar, dill, chicken broth, lemon juice, salt, and pepper into a pot and bring to a boil.
4.Add in the artichokes and boil until slightly tender, around 25-30 minutes.
5.Remove the artichokes and set aside.
6.In a separate bowl, whisk together the egg yolks, lemon juice, arrowroot or cornstarch, salt, and pepper.
7.Gradually pour in the chicken broth while whisking continuously.
8.Pour the sauce into a pot and cook over medium heat until it thickens, around 5 minutes.
9.Place the artichokes into the pot with the sauce and cook for a few more minutes.
10.Serve hot or cold, garnished with fresh dill and lemon wedges if desired.
