Ingredients

3 cups self rising flour
1/2 cup sugar

1 egg , lightly beaten
1 lemon , juice and zest of , grated
1 1/2 cups buttermilk
100 g butter , melted and cooled
425 g sliced mangoes in syrup , drained and chopped
1/4 cup caster sugar

Instructions

1.Preheat oven to 180C/350F and prepare a 12-cup muffin tray with baking paper.

3.In a separate bowl, whisk together the egg, lemon juice and zest, buttermilk, and melted butter until well combined.
4.Pour wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped mango.
5.Divide the mixture evenly among the 12 muffin cups, sprinkling each with caster sugar.
6.Bake for 20-25 minutes, or until a toothpick comes out clean.
7.Allow muffins to cool in the tray for 5 minutes before transferring them to a cooling rack.
