Ingredients

6 boneless skinless chicken breasts ( trimmed of fat )
125 ml white wine
2 tablespoons lemon juice ( fresh )
1 teaspoon olive oil ( extra virgin )
2 garlic cloves ( minced )
2 teaspoons coarse grain mustard ( or gluten free wholegrain mustard )
2 tablespoons parsley ( or tarragon chopped )
1 lemon ( skin peeled into long thin strips , use a vegetable peeler )
cooking spray
9 peaches ( cut into thin wedges )
1 small red onion ( halved and thinly sliced )
1 bunch basil ( leaves picked and torn if large )
80 g baby salad leaves
8 bocconcini ( baby halved or torn )
2 slices prosciutto ( thin and cut into thin strips )
1 1/2 tablespoons red wine vinegar
1 teaspoon olive oil ( extra virgin )
2 teaspoons Dijon mustard ( or gluten free dijon mustard )
ground black pepper ( freshly , to taste )

Instructions

1.Preheat the oven to 200C/180C fan.
2.Mix together the white wine, lemon juice, olive oil, garlic, mustard, parsley or tarragon and torn lemon peel in a bowl.
3.Lightly coat a large casserole dish with cooking spray.
4.Arrange the chicken breasts in the dish and pour the wine mixture over them.
5.Arrange the lemon peels on top of the chicken.
6.Bake for 25-30 minutes or until the chicken is cooked through.
7.While the chicken is cooking, mix together the peaches, red onion, basil, baby salad leaves, bocconcini, and prosciutto strips in a large bowl.
8.In a separate bowl, whisk together the red wine vinegar, extra virgin olive oil, Dijon mustard, and black pepper to make the dressing.
9.Pour the dressing over the peach and prosciutto salad and toss to coat.
