Ingredients

6 -7 lbs leg of lamb
3 cloves peeled garlic
1 1/2 teaspoons dried rosemary or 1 1/2 teaspoons dried thyme ( if you find rosemary too strong )
coarse salt
6 tablespoons olive oil
6 large peeled seeded diced ripe tomatoes
water
salt
fresh ground pepper
30 ounces frozen peas
Leg of lamb Tuscany style, also known as agnello con piselli alla Toscana, is a traditional Italian dish that is often served during special occasions. This recipe uses a leg of lamb, which is seasoned with garlic, rosemary or thyme, and coarse salt, making it more flavorful and aromatic. It is then roasted in a pan with diced tomatoes and water, making sure the lamb is tender and juicy. Instructions

1.Preheat oven to 375°F (190°C).
2.In a small bowl, combine the garlic, rosemary or thyme, and coarse salt.
3.Rub the herb mixture all over the lamb and place it in a large roasting pan.
4.Drizzle the 6 tablespoons of olive oil over the lamb, then surround it with the diced tomatoes.
5.Add enough water to come almost up to the top of the tomatoes, then season with salt and pepper.
6.Cover the roasting pan with foil and place it in the oven.
7.Allow the lamb to roast for 2 1/2 to 3 hours or until cooked through and tender.
8.Add the frozen peas to the pan during the last 10 to 15 minutes of cooking time.
9.Once finished cooking, allow the lamb to rest for 10 minutes before carving. Serve with the tomato and pea mixture from the roasting pan.
