Ingredients

1 1 lb chicken breasts ( raw , sliced ) or 1 lb shrimp ( or a combination of the three )
1 bottle teriyaki sauce
1 onion , sliced
1 green pepper , sliced
shredded lettuce
2 cups shredded cheddar cheese
flour tortilla ( store bought or homemade , see below )
guacamole ( optional )
sour cream ( optional )
salsa
4 cups flour
2 teaspoons salt
1/2 cup butter , softened
1 1/2 cups water

Instructions

1.Preheat oven to 350°F.
2.In a large pan, heat olive oil over medium heat. Add sliced onion and green pepper, cooking until softened. Add shredded beef, chicken, or shrimp to the vegetables and toss with teriyaki sauce.
3.While the meat is cooking, make the tortillas. In a large mixing bowl, whisk together the flour and salt. Add the butter and water and mix until combined and a dough forms. Knead the dough for a few minutes, then let rest for 5-10 minutes. Roll the dough out into thin circles and cook on a griddle or pan until lightly browned on both sides. Set aside.
4.Layer the tortillas with shredded lettuce, the meat and vegetable mixture, cheddar cheese, and any optional toppings such as guacamole, sour cream, and salsa.
5.Bake the assembled fajitas in the preheated oven for 10-15 minutes or until the cheese is melted and bubbly.
